
I thought I would post our meal plan for May, as it shows we are getting closer to eating more low meat and vegetarian meals. This has been a goal of ours since the beginning of the year, but its a little harder than you would think to find meals that don't center around meat. Of course there are some easy ones, like spaghetti, and breakfast items, but we cant eat waffles and noodles all month long! So there are lots of new dinners to try on this menu that I am excited about. The dinners marked with a * are low or no meat (marked with a star on the calendar) and the ones marked with a ^ are new to us this month.
May 3rd - Mac and Cheese (Mondays are the nights Matthew is gone so we usually eat things that are cheesy and/or easy on those days)
May 4th - Steak with homemade bread and salad
May 5th - Eggs with sausage and fruit *
May 6th - Szechuan noodles and pork *
May 7th - Chipotle bean burritos *
May 8th - Chili con carne with homemade bread ^
May 9th - Spaghetti with homemade bread sticks and salad *
May 10th - Banana and Peanut butter roll ups with no bake peach crisp *
May 11th - Thai pork wraps ^
May 12th - Vegetable pad Thai with Broccoli *^
May 13th - Soft tacos with homemade tortilla's
May 14th - Noodles with roast pork and almond sauce *^
May 15th - Homemade meat and cheese ravioli and salad ^
May 16th - Homemade gnocchi with salad *^
May 17th - Waffles with berry syrup *
May 18th - Soba noodle salad with chicken and scallions *^
May 19th - Omelets with hash browns *
May 20th - Beer braised sausages with warm potato salad ^
May 21st - Peppercorn pork w/ Dijon cider sauce, homemade bread and salad
May 22nd - Spaghetti with homemade bread and salad *
May 23rd - Pork and chive pot stickers w/ rice and stir fry veggies *
May 24th - Eggs and hash browns *
May 25th - Glazed drumsticks with quinoa ^
May 26th - Gyros with homemade pita bread
May 27th - Beef and broccoli stir fry with rice ^
May 28th - French toast with fruit *
May 29th - Bean and rice burritos with homemade tortilla's *
May 30th - Chipotle bean burritos * (this will probably change as I just noticed the day before is burritos too....can you tell I love Mexican food!?!?)
May 31st - Sandwiches and fruit
So it looks like there are 13 totally vegetarian meals, and 5 with low meat (under 3/4 pound). I guess that's not too bad, although there is still room for improvement. I would ideally like to get down to having meat just two times a week, so it looks like I need to keep searching for new vegetarian meals!
