Beef Bone Broth

Finally staring down some of the beef bones in my freezer, I made some bone broth today and it is SO deliciously yummy. I roasted some knuckle bones, some marrow bones and a cow tail in the oven until they were nice and brown, then tossed them in a pot with some celery, carrots and onion and let the whole thing simmer on the stove for about 24 hours. It came out a beautiful dark caramel color, with a healthy layer of fat on top:


That picture was taken when it was warm, but a few hours in the fridge firmed that fat right up, so I could easily break it apart and save it for other uses:




I was really surprised at what a nice gel the stock had - I tipped my jar sideways and not a drop came pouring out!




I am hoping to get in the habit of drinking some each day, as well as using it in our stews and soups. Bone broth is such an incredibly nourishing food, and I am really happy to have a freezer full of bones and scraps so I can have a continual supply ready for consumption!
