Today I hosted a paleo potluck at my house, and spent the afternoon with a six amazing women (and a whole bunch of amazing food). A couple of us have been paleo for awhile, a couple were very new to it, and a couple were just curious about how to get started. I thought it was a great mix, because the veterans had lots of tips and tricks to share with the newbies, and the newbies had so much enthusiasm that it was a great reminder to the veterans about why we started eating like this in the first place.
Everyone sat around at shared their stories, and it was so inspirational! As hokey as it sounds, paleo really is life changing. All of us, even the ones who had only made the switch just recently, shared stories of effortless weight loss, health problems disappearing almost overnight, and of increased energy and mood. All from changing the food we eat! I never would have believed it, but once you eat this way for a couple weeks, and then a couple months, you start connecting the dots and seeing how our SAD (Standard American Diet) was of eating really is destroying our health from the inside out. The food you eat effects every single part of your life, from your emotions, to your body, to your sleep cycles, and dare I say, your happiness. We shared not only our successes, but our struggles, our goals and desires, and why we did eat, or wanted to eat this way. I loved hearing everyone's stories, and seeing the passion and desire that people had to take control of their health and make long lasting changes in their lives.

All that talk sure worked up an appetite, and luckily, we had plenty of food to go around. Anybody who says that eating paleo is restrictive or boring clearly hasn't been to a paleo potluck! Everything was delicious, and we all thoroughly enjoyed the smorgasbord of veggies and meat. Everyone's favorite? These bacon wrapped meat "turtles" that Angie made:

They were delicious, and a totally fun way to celebrate our paleo love affair with meat and bacon. My own meaty offering was much more plain, but just as delicious (if I do say so myself)! Sunshine chicken skewers from my favorite paleo cookbook, Well Fed.

I also made my very favorite veggie dish - shredded brussel sprouts with bacon. Even those who hate brussel sprouts end up changing their minds after a taste of these ones. Yum!

We also had a side salad, some hard boiled guacamole eggs, and some tasty little paleo muffins:

And one of everyone's favorites - a paleo strawberry cheesecake!!

We all dug in and sampled everything. It was all so delicious! And according to Killian in this picture, finger lickin' good!

We ate till we were all completely stuffed, and then we dug into that cheesecake (which was AMAZING)! This was such a fun afternoon, and I really enjoyed the information and stories that everyone had to share. It makes me so happy to be part of such a wonderful group, and I am looking forward to many more afternoons like this, full of delicious food and amazing women!
